I spent a lot of time in the kitchen this week and took the time to try a new bread recipe. This new recipe has gotten lots of praise in my house.
Whole Wheat and White Bread
3 cups hard red wheat, milled
5 cups hot water
2/3 cups sugar
1/2 cup butter, melted
3/4 cup oil
2/3 cup dry milk powder
1 1/2 Tablespoon sea salt
4 Tablespoon yeast
About 7 cups white flour
Mix water, sugar, butter, oil, milk powder, and sea salt. Add hard red wheat and mix well. Add yeast and continue mixing. Slowly add enough white flour to form a soft dough (when dough begins to clear the sides of the bowl). Knead for about 6 minutes on medium speed (12 minutes by hand). Let dough rise until double, about 45 minutes. Punch dough down and work well to remove all air bubbles. Form into loaves or dinner rolls and place in pans. Allow to rise until double, about 30 minutes. Bake at 350 for about 35 minutes or until golden brown. Makes 4-5 loaves
I got 2 small loaves, 1 large loaf and about 20 dinner rolls. This recipe is the best bread I have made in a long time.
