English Muffins 101

I have never tried to make English Muffins before, but this recipe looked so easy, I just had to give it a try.  The results were fantastic.  My first surprise was that English Muffins are not baked-they are cooked on a griddle!!  How strange!  But they sure do taste great.

English Muffins



1 cup hot water
1/2 cup milk
2 tsp honey
2 tsp salt
3 cups wheat flour
1 cup white flour
2 tsp yeast
3 Tablespoons butter, softened

Combine, water, milk, honey and salt.  Add 2 cups of flour and beat well.  Add the yeast and mix well.  Cover and let rise in a warm place for about 1 hour.  Beat in the softened butter.  Knead in the remaining flour forming a soft dough (4-5 minutes).  Turn the dough out on a surface sprinkled with cornmeal.  Flatten the dough to about 1/2 inch thickness. Cut into 3 inch circles.  Let rest on a slightly greased cookie sheet until doubled.  Carefully lift with a pancake turner to a hot, well buttered griddle (350 degrees).  Cook on each side until lightly browned. 


Cool slightly.  Separate with a fork and toast the halves.
